TASTING NOTES This perfectly balanced, volnay-like wine is full of ripe cranberry and black cherry flavors met with black tea and cacao. Aromas of blueberry and cola compliment each other nicely as it finishes with slate-like minerality and soft, smooth tannins.

INGREDIENTS (4) 6 –8 oz. skin-on salmon fillets 5 Tbsp. extra-virgin olive oil, divided 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt, plus more Freshly ground black pepper 1 tsp. saffron threads 3 lemons, divided 1 cup dill leaves with tender stems 1 cup high-quality basmati rice ¼ cup parsley leaves with tender stems 1 cup plain thick yogurt (such as labneh, skyr, or Greek)

DIRECTIONS

1 Preheat oven to 400°. Pat four 6 – 8 oz. skin-on salmon fillets dry with a clean kitchen towel or paper towels. Place in a large glass or ceramic baking dish; drizzle with 2 Tbsp. extra-virgin olive oil and season all over with kosher salt and freshly ground black pepper. Rub salmon to coat and arrange skin side down. 2 Crush 1 tsp. saffron threads in a mortar and pestle (a small bowl and the handle of a wooden spoon also work well) until it’s mostly powder (it’s okay if it’s not perfectly powdery). Transfer to a small bowl and pour in 1 Tbsp. plus 1½ tsp. warm water…
The grapes are harvested from Wind Willow Vineyard, Presqu’ile Vineyard and Sanford & Benedict Vineyard, aged in 100% Neutral French Oak and blended by Team Argaux and Marc Piro.

CENTRAL COAST, CALIFORNIA When we speak of Central Coast, CA were including numerous diverse regions from Santa Cruz down through Santa Barbara counties. This encompasses smaller areas such as Santa Cruz Mountains AVA , Monterey AVA , Paso Robles AVA , Santa Maria Valley AVA , Santa Ynez Valley AVA , and Sta. Rita Hills AVA . The Central Coast is responsible for many great value wines from a multitude of grape varietals depending on the climate within the specific designated areas. From the coastal AVA’s with influence from the fog and cooling effects, you will find Chardonnay and Pinot Noir. The inland AVA’s are much warmer, like Paso Robles, so look here for outstanding Syrah, Grenache, Zinfandel, or Rhône-style blends.

We teamed up with Marc Piro of Piro Wine Company, one of our most-trusted winemakers in the Central Coast, to create the ‘NO NAME’ label giving you a high-quality taste of California Chardonnay and Pinot Noir at an accessible price point.

Marc knew he wanted to be a winemaker when he was nine years old. He sat in the crowded backseat of his family’s beige Mercedes diesel station wagon as they drove through the vineyards of Sonoma’s Dry Creek Valley. Inspired, he announced, “Mom, I want a vineyard.” Her response was curt: “ Well, then, get a good job.”

In 2012, Marc won a young winemakers scholarship which placed him at Au Bon Climat for an internship. The winery is located in the Santa Maria Valley and is led by two of the most legendary winemakers in the valley…
